Ingredienti (per 4 persone)
- 8 slices of rustic bread (ideal is homemade bread, like Tuscan or Apulian)
- 4-5 ripe tomatoes (perini or cherry type)
- 2 cloves of garlic (fresh and aromatic)
- Some fresh basil leaves
- Fine salt to taste.
- Freshly ground black pepper to taste.
- Pepito Extra Virgin Olive Oil – Sicut Olim (about 6-8 tablespoons)

Procedimento
- Bread Preparation:
- Cut the bread into slices about 1.5 cm thick.
- Toast the slices on a hot grill or in a preheated oven at 200°C for about 5-7 minutes, until golden and slightly crispy.
- Preparation of the Tomato Dressing:
- Wash the tomatoes and cut them into small cubes.
- Place them in a bowl and season with a pinch of salt, freshly ground black pepper, and 3-4 tablespoons of extra virgin olive oil.
- Tear some fresh basil leaves by hand and add them to the tomato mixture. Gently stir and let it sit to infuse for 5-10 minutes.
- Flavoring the Bread:
- Rub a clove of garlic on each slice of warm bread. This step will give a delicate and aromatic flavor without being overpowering.
- Assembly:
- Evenly distribute the tomato mix over the toasted bread slices.
- Drizzle another bit of extra virgin olive oil raw on each bruschetta to enhance the flavor.
- Serve:
- Arrange the bruschetta on a serving plate, garnishing them with a few fresh basil leaves. Serve immediately, while still warm.
